We can put the pineapple-on-pizza debate to rest (for now) so we can focus on this punchy crowd pleaser of a drink.
The trick to really bring out the ginger-y spice is to let it macerate with the sugar, lime, and mint leaves. Muddle all the ingredients until you see it break and release it’s juices. Next time you host a boozy brunch at home, skip mimosas for day drinks and make this spicy pineapple mojito instead.

- ½ cup white sugar
- 1 tsp. chili powder
- 1 tsp. salt
- 1 lime wedge
- 2 tbsp. lime juice
- 2 tbsp. white sugar
- 2 pieces ginger, 1 inch slices
- ½ cup mint leaves
- 1 cup ice
- 1 cup pineapple juice
- ¾ cup white rum
- Soda water
1. In a small bowl, mix the white sugar, chili powder, and salt until well combined.
Pour mixture onto a plate. Prepare two high glasses and rub the rims with the lime wedge.
Dip the rims of the glasses into the salt, sugar, and chili mixture.
2. Divide the lime juice, white sugar, ginger, and mint leaves evenly between the two glasses.
With a pestle or muddler, mash the ingredients until the sugar is dissolved and the ingredients have broken down.
3. Divide the rest of the ingredients between the two glasses, starting with the ice, then the pineapple juice, followed by the rum.
Stir the drink to combine the flavors, and top off with soda water.
